Honey Balsamic Glazed Carrots & Cranberries
What you need:
6 Medium to large carrots (I got the multi-colored pack from Whole Foods)
1/2 Large whiteonion
1/2 Cup cranberries
1 Tablespoon honey
Balsamic Vinaigrette
Salt & Pepper
EVOO
To make:
1. Turn oven on to 400 degrees
2. Cut carrots into desired size (I cut mine in 1/4 pieces)
3. Slice onion
4. Combine sliced carrots & onion to a bowl & coat with honey, drizzle of balsamic vinaigrette, and desired amount of EVOO and salt & pepper
5. Line a baking tray wth tin foil, add carrots and onion to oven, and bake for 45-60min (make sure to turn veggies half way through so they can brown on both sides)
6. Once carrots and onion are browned on the outside, remove from oven
