Crazy For Coconut Energy Bites

What you need:

1 & 1/4 Cup almond flour 

8-10 Medjool dates (pitted & chopped)

1 & 1/4 Cup raw walnuts

2 Teaspoons vanilla extract

Finely shredded unsweetened coconut 

Pinch of sea salt 

To make:

1. Add the dates to a blender and mix until a ball forms 

2. Remove from blender and add dates to bowl

3. Add the almond flour and walnuts to food processor and blend until consistency is meal-like

4. Add the mixed dates back into the blender as well as the vanilla extract, & blend until dough-like consistency 

5. Scoop out the dough using a cookie scooper or spoon and roll into balls (my dough was a little dry/crumbly, so I microwaved a small amount of coconut butter and used that to firm up the dough)

6. Line a cookie sheet with parchment paper, and place directly on cookie sheet

7. Dip in finely shredded coconut, store in the refrigerator for up to 1 week, and...
